They could still employ their own force techniques or keep on fighting with that lightsaber.What id imagine is that once combatants are immersed in a lightsaber duel based on their attunement to the force, either the sith or the jedi would get sensations of when concentrated force abilities are being employed.
Basically, trying to use a force choke would be pointless as it leaves you open to attacks or your opponent simply blocks it. In the Drew karpynshin Books (which I consider to be some of the most valid star wars material, especially when it comes to explaining the rules of the force) It explains that people trained in the force through up a force barrier during combat to protect against force attacks, Except in the case were an opponent is sufficiently more stronger, they can power through these berries to attack directly. Then again, the movies dont seem to have the same rules when it comes to this stuff.I live a sad life.
